Did you know most of the things we consider treats today, from cocktails to marshmallows, originally had medicinal qualities?

Making your own marshmallows is not only fun but can also offer health benefits when you use nourishing ingredients. Beef gelatin is rich in collagen, supporting joint, skin, and gut health. Marshmallow root extract adds soothing properties for your digestive system and throat. Honey with propolis and royal jelly brings natural sweetness while boosting immunity and offering antibacterial and antioxidant support. These marshmallows are a delicious way to enjoy a treat while supporting your health!

Ingredients:

1 cup water, divided into two 1/2-cup portions
3 tablespoons beef gelatin powder
1/4 cup honey, maple syrup, or another natural sweetener (adjust to taste)
1/2 teaspoon marshmallow extract
1/4 teaspoon vanilla extract (optional, for added flavor)
Pinch of salt

Instructions:

Bloom the Gelatin:
- In a large mixing bowl, sprinkle the gelatin over 1/2 cup of cold water. Let it sit for 5-10 minutes to bloom (it will absorb the water and become gel-like).
Heat the Sweetener Mixture:
- In a small saucepan, combine the remaining 1/2 cup of water, your chosen sweetener, and a pinch of salt. Heat the mixture over medium heat, stirring occasionally, until it begins to simmer. Do not boil it too long, as it may affect the texture.
Combine and Whip:
- Slowly pour the hot sweetener mixture into the bloomed gelatin while mixing on low speed with a hand or stand mixer. Once combined, increase the speed to high and whip for 10-12 minutes. The mixture should become thick, fluffy, and white, resembling marshmallow cream.
Add Flavoring:
- During the last minute of whipping, add the marshmallow extract and optional vanilla extract.
Set the Marshmallows:
- Pour the marshmallow mixture into a greased or parchment-lined pan. Smooth the top with a spatula. Allow the marshmallows to set at room temperature for 4-6 hours or overnight.
Cut and Coat:
- Once set, remove the marshmallow block from the pan. Use a sharp knife or scissors greased with oil to cut the marshmallows into your desired shapes. You can lightly dust them with arrowroot powder, coconut flour, or powdered sugar to prevent sticking.

These marshmallows will have a softer, more natural texture compared to store-bought ones but are perfect for snacking or adding to hot drinks!
